What you will need: Oven, Cookie Sheet, Timer, and Kitchen Towel *PUMPKIN BATTER: 1. 3 Eggs 2. 2/3 cup of Canned pumpkin 3. ¾ cup of Flour (self-rising) 4. 2 teaspoons of cinnamon 5. ½ teaspoon of salt *ICING: 1. Cup of Powdered Sugar 2. 8 ounce Cream Cheese 3. ¼ cup of soft margarine 4. 1 teaspoon of Vanilla POWDERED SUGAR for top.
DIRECTIONS: -Preheat oven 350 degrees. -Beat eggs until they are fluffy. -Add flour and spices including canned pumpkin. -Mix very good! -Put in oven and let bake for 15-20 minutes. -Get a kitchen towel (bigger than cookie sheet), spread it out flat and sprinkle lots of flour onto it. -Put cake onto towel and roll all together. Let set in fridge for an hour. -Mix cream cheese, margarine, powdered sugar, and vanilla together. -Once cake is cooled down, spread icing over cake. -Place seam side down and put in fridge again. -Sprinkle powdered sugar on top.
