EASY SALTED CARAMEL POPCORN–This sweet and salty snack is quick and easy to make!
1/4 cup vegetable oil
1/2 cup popcorn (uncooked)
1/2 cup butter
1/4 cup light corn syrup
1 cup brown sugar
1 teaspoon vanilla
1 teaspoon fine sea salt
1 teaspoon baking soda
Line a baking sheet with wax paper or a silicone baking mat.
Heat a large heavy-bottomed pot over medium high heat. Once hot, add oil and popcorn. Place lid over popcorn and gently shake pan for 4-5 minutes or until all popcorn has popped. Remove popcorn and place into a large bowl.
For the Caramel Sauce: In a medium saucepan over medium heat, add the butter. Once the butter has melted, add the corn syrup and brown sugar. Stir to combine. Bring to a boil and simmer for 3 to 4 minutes. Remove from heat. Stir in the vanilla, fine sea salt and baking soda. Immediately pour on popcorn. Stir popcorn until all popcorn is evenly coated.
Allow to cool before eating.
Tip: Store popcorn in a zip-tight plastic bag to keep fresh for up to 5 days!
